Direction for Use (How to Prepare):
1. For Idiyappam & Pathiri:
- Step 1: Boil water with a pinch of salt and a teaspoon of oil.
- Step 2: Add the Kanchana flour gradually into the boiling water and stir well until it forms a smooth dough.
- Step 3: For Idiyappam, press the dough through an idiyappam maker onto idli plates and steam for 5–8 minutes.
- Step 4: For Pathiri, make small balls of dough, roll them into thin circles, and cook on a hot tawa without oil until soft.
2. For Appam:
- Step 1: Mix Kanchana flour with coconut milk or water, a pinch of yeast (or fermented coconut water), and a little sugar.
- Step 2: Let the batter ferment for 6–8 hours.
- Step 3: Pour a ladle of batter into an ‘Appa Chatti’ (Appam pan), swirl to spread, and cook until the edges are crispy and the center is soft.
